CHAWAR is a small-batch agave spirit made from agave sap harvested in the Andean highlands of Ecuador, with the sap naturally fermented with wild yeast and double distilled. The spirit is produced in Yaruqui, a small town near Quito, and the harvesting is carried out by an all-women agave harvesting co-op.
