Echigo Yakuso Distillery

Echigo Yakuso is a Japanese company in Joetsu, Niigata Prefecture, that has spent decades researching wild-herb enzymes and fermented health foods. Its YASO spirit and gin are made from alcohol produced as a by-product of that health-food process, redistilled with botanicals such as juniper, peach and jasmine flower. The company runs a distillery there and holds open-day tours and blending workshops.
